Origin
The Hautes-Côtes de Beaune region begins after Corgoloin with a depth of 5km, and extend southwards for almost 30km to the little village of Chassey-le Camp, close to Chagny. The soil types vary and the altitude ranges from 350 to 500m. Many of the little valleys are composed mostly of clay, which suits the Pinot Noir well.
Our wine comes from the Changes sector near Décize-Lès-Maranges.
Viticulture
Grape variety: pinot noir
Soils: lean, very calcareous and marly.
Orientation: South/South-East
Surface area under vine: 0.80 ha
Pruning: Guyot system
Yield: 28 hL/ha
Average age of the vines: 44 years old.
Vinification
Harvest date: 16 September 2023.
The grapes were sorted a first time in the vineyard and a second time on the sorting table when they arrived at the winery.
At the winery: the grapes were 100% destemmed but not crushed (they were left whole) and were gravity-fed into tanks. Maceration of 21 days of which 1 day cold (12 ° C): Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 6 punchings of the cap.
Ageing
Maturation: aged on the lees for 12 months with no racking using a proportion of 30% new French oak barrels.
Barrels: French oak barrels that had been toasted at low temperatures for a long time for very delicate oaking.
Bottling
Bottling: by gravity on October 2024, wine fined with bentonite, very light lenticular filtration.
Number of bottles: 2,966.
Vintage
Fruity and generous
The 2023 vintage experienced unpredictable weather conditions, making work in the vineyards essential for grape quality. Harvesting began in early September under intense heat with the Chardonnays to avoid over-ripening, followed by the reds. The whites will spend two winters in the cellar, while the Pinot Noirs will have undergone short ageing to preserve the fruity aromas. A vintage that brings out the best in each terroir, offering wines that are bright and delicious.
Ageing potential: from 3 to 5 years.
Tasting notes
Ruby-colored, this wine reveals a slightly woody nose with notes of leather and spices. The palate is full-bodied, with robust tannins and a slight acidity on the finish.
