This wine is made from selected plots, with no sulfur used during vinification to capture its true nature as closely as possible, with nothing added and nothing taken away.
This results in a natural, pure Burgundy, dense and elegant, its character underscored by a powerful structure with good volume. The unbridled expression of a free wine.

Origin

This wine has the noblest pedigree imaginable, coming as it does from the Côte de Nuits. The grapes were grown on Nuits-Saint-Georges village on the plot “Petit Chaillot” (GPS:47°07'23.8"N 4°56'41.6"E) which is located on the Premeaux-Prissey side, over the D974 road. The vine, selected by our vinicultarist come from a visual selection of the most robust vines of the parcel. It produces very small bunches of Pinot Noir grapes with very thick skins; a sign that the wine will have great concentration.

Vinification

Harvest date: September the 14th 2017.
The grapes were handpicked and collected in 20-kg perforated crates. They were sorted a first time in the vineyard and a second time on the sorting table when they arrived at the winery, without sulphur added.
At the winery: the grapes were completely destemmed but not crushed and were gravity-fed into tanks. Maceration lasted a total of 22 days including one week of cold maceration (12°C). Fermentation used indigenous yeasts only. Infrequent punching of the cap (six maximum). Maximal temperature: 29°C.

Ageing

Maturation: aged on the lees for 14 months with no racking using a proportion of 30% new French oak.
Barrels: French oak barrels that had been toasted at low temperatures for a long time for very delicate oaking.

Bottling

Bottling: the wine was not fined, but was very gently filtered before being bottled using gravity in December 2018.

Vintage

2017, finesse
The growing cycle was thrown off-kilter by a very cold winter, late spring frost, then optimal conditions for rapid flowering, sporadic hail, and summer drought. Harvesting began in early September in the sun, and after several lean years, the vines finally produced abundant grapes, although with significant differences in maturity between whites and reds and from one region to another, which called for strict sorting.
Ageing potential: 5 to 8 years

Tasting notes

With a beautiful clear ruby ​​red color, it reveals a beautiful aromatic freshness marked by notes of red fruits, slightly spicy. The mouth is supple with a nice tangy frame. The tannins are very silky.
