This wine is made from selected plots, with no sulfur used during vinification to capture its true nature as closely as possible, with nothing added and nothing taken away.
This results in a natural, pure Burgundy, dense and elegant, its character underscored by a powerful structure with good volume. The unbridled expression of a free wine.
Origin
This wine has the noblest pedigree imaginable, coming as it does from the Côte de Nuits. The grapes were grown on Nuits-Saint-Georges village on the plot “Petit Chaillot” (GPS:47°07'23.8"N 4°56'41.6"E) which is located on the Premeaux-Prissey side, over the D974 road. The vine, selected by our vinicultarist come from a visual selection of the most robust vines of the parcel. It produces very small bunches of Pinot Noir grapes with very thick skins; a sign that the wine will have great concentration. In 2018, a plot of the commune of Chambolle-Musigny, located at the bottom of the village was added.

Vinification
Harvest date: September the 16th 2018.
The grapes were handpicked and collected in 20-kg perforated crates. They were sorted a first time in the vineyard and a second time on the sorting table when they arrived at the winery, without sulphur added.
At the winery: the grapes were completely destemmed but not crushed and were gravity-fed into tanks. Maceration lasted a total of 21 days including 5 days of cold maceration (12°C). Fermentation used indigenous yeasts only. 5 punchings of the cap. Vinification without sulfur.
Ageing
Maturation: aged on the lees for 11 months with no racking using a proportion of 45% new French oak.
Barrels: French oak barrels that had been toasted at low temperatures for a long time for very delicate oaking.
Bottling
Bottling: the wine was not fined, but was very gently filtered before being bottled using gravity in September 2019.

Vintage
2018, abundance and excellence
After a winter that was almost too mild, the vintage was notable for two contrasting periods. Spring was sunny and totally devoid of frost, despite some localized episodes of hail, which had major impact on certain plots on the Côte de Nuits, which were hit in June. Then the summer was dry and hot, blocking the ripening process in places. Picking began early, with exceptionally abundant fruit in tip-top condition, offering the potential for some very fine wines.

Tasting notes
With a beautiful dark red robe with purple nuances, it exudes intense aromas of morello cherries and small black fruits. Slightly smoky. Some sweet spices. On the palate, a supple attack and on the fruit. Melted tannins. Freshness on this warm vintage!
