Savigny-Lès-Beaune
Les Planchots 2021
Balance and maturity are the two words that come to mind when Savigny’s vineyards are mentioned.
They are located three kilometres north of Beaune.
Origin
This appellation boasts 180 ha of “Village” appellation. Savigny’s vineyards form a V-shape and are located at the meeting place of a valley and the plain, offering some of the most picturesque scenery in the Côte d’Or.
The climate "Les Planchots" is located at the entrance to the Savigny-Lès-Beaune valley, close to the national road. The Rhoin river runs through the middle of the plot.
Planchot is the Burgundian derivative of Planche (from late Latin Planca). Since the Middle Ages, one has called Planche a footbridge, a litlle bridge made with planks enabling people and animals to cross a river on foot.
Viticulture
Grape variety: pinot noir
Soils: mostly marly and fairly deep.
Orientation: South
Surface area under vine: 0.3285 ha
Pruning: Guyot system
Yield: 27 hL/ha
Average age of the vines: 52 years old.
Vinification
Harvest date: 25 September 2021.
The grapes were handpicked. They were sorted a first time in the vineyard and again on the sorting table when they arrived at the winery.
At the winery: the grapes were completely destemmed but not crushed (they were left whole) and were gravity-fed into tanks. Total maceration of 20 days including 4 days cold (12 C). Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 4 punchings of the cap.
Ageing
Maturation: aged on the lees for 13 months with no racking using a proportion of 33% new French oak barrels.
Barrels: French oak barrels that had been toasted at low temperatures for a long time to impart a very delicate touch of oak to the wine.
Bottling
Bottling by gravity in February 2023, after a slight lenticular filtration.
Number of bottles: 1,191.
Vintage
A complex vintage!
It is both a winegrower and winemaker’s vintage ! 2021 will unfortunately be remembered quantity-wise for a long time by its disastrous frost early april. Direct consequence: this is probably one of the smallest vintages ever in Burgundy . It offers a very nice and subtle representation of each terroir and its expression, with fruity, freshness and great finesse wines.
Ageing potential: from 6 to 10 years.

Tasting notes
With its pretty ruby colour, this wine reveals intense aromas of whole harvests, black fruits and chocolate notes. This wine can be slightly reduced on opening. On the palate, it has a slightly rustic texture and a lovely freshness.
