They are located three kilometres north of Beaune.

Origin

Savigny’s vineyards form a V-shape and are located at the meeting place of a valley and the plain, offering some of the most picturesque scenery in the Côte d’Or. These vineyards are of ancient lineage. For much of their history, they belonged to the domaine of the Dukes of Bourgogne, to neighbouring religious houses, or to the Knights of Malta. An imposing 14th century castle testifies to the appellation's aristocratic qualifications.
The plot "Les Peuillets" is juxtaposed with the vineyard of Beaune, at an altitude of 250 meters. This vine is planted on gentle slopes, and near the Rhoin river.
The origin of the name "Peuillet" would be a derivative of the old French: Pol which means the pond, the pond or the marsh. Former swampy area.

Viticulture

Grape variety: pinot noir
Soils: clay-limestone and sandy.
Orientation: South/East
Surface area under vine: 0.1587 ha
Pruning: Guyot system
Yield: 50 hL/ha
Average age of the vines: 52 years old.

Vinification

Harvest date: 1 September 2022.
The grapes were handpicked. First sorting in the vineyard, second on the sorting table upon receipt of the harvest.
At the winery: 70% of grapes were destemmed but not crushed (they were left whole) and were gravity-fed into tanks. Maceration lasted a total of 20 days including 3 days of cold maceration (12°C). Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 3 punchings of the cap.

Ageing

Maturation: aged on the lees for 10 months with no racking. 40% new French oak barrel.
Barrels: French oak barrels that had been toasted at low temperatures for a long time for very delicate oaking.

Bottling

Bottling: by gravity in September 2023, unfined wine, very light filtration.
Number of bottles : 1,087.

Vintage

Abundance and excellence!
Despite the drought, we saw consistent volumes combined with quality. Almost no sorting was required as the grapes were superb. The winemaking process went smoothly. Perfect conditions offering the potential for some very fine wines.
Ageing potential: From 6 to 9 years.

Tasting notes

A brilliant ruby-red color. On the nose, this wine exudes aromas of red berries and violets, with a hint of minerality. The palate is silky, structured by fine tannins.
