Balance and maturity are the two words that come to mind when Savigny’s vineyards are mentioned.
They are located three kilometres north of Beaune.

Origin

Savigny’s vineyards form a V-shape and are located at the meeting place of a valley and the plain, offering some of the most picturesque scenery in the Côte d’Or. These vineyards are of ancient lineage. For much of their history, they belonged to the domaine of the Dukes of Bourgogne, to neighbouring religious houses, or to the Knights of Malta. An imposing 14th century castle testifies to the appellation's aristocratic qualifications.

This cuvée is a blend of two plots of land that were hit by hail in 2021, "Les Lavières" and "Les Guettes".

Viticulture

Grape variety: pinot noir
Soils: complex, mixture of limestone, scree and clay.
Orientation: South
Surface area under vine: 0.81 ha
Pruning: Guyot system
Yield: 8 hL/ha
Average age of the vines: from 30 to 60 years old.

Vinification

Harvest date: 24 September 2021.
The grapes were handpicked. They were sorted a first time in the vineyard and again on the sorting table when they arrived at the winery.
At the winery: the grapes were 100% destemmed but not crushed (they were left whole) and were gravity-fed into tanks. Maceration lasted a total of 21 days including 5 days of cold maceration (12°C). Fermentation used indigenous yeasts only (no additives such as enzymes or tannins were used). 2 punchings of the cap.

Ageing

Maturation: aged for 16 months with no racking or stirring. 50% new French oak barrels.
Barrels: Oak of French origin toasted at low temperatures for a long time to impart a subtle, delicate touch of oak were used.

Bottling

Bottling in March 2023, the wine was very gently filtered before being bottled using gravity.
Number of bottles: 865.

Vintage

A complex vintage!
It is both a winegrower and winemaker’s vintage ! 2021 will unfortunately be remembered quantity-wise for a long time by its disastrous frost early april. Direct consequence: this is probably one of the smallest vintages ever in Burgundy . It offers a very nice and subtle representation of each terroir and its expression, with fruity, freshness and great finesse wines.
Ageing potential: from 5 to 10 years.

Tasting notes

With its deep ruby color, this wine reveals intense aromas of black cherries, raspberries, toasted notes and black pepper. On the palate, the wine is structured, slightly woody, with structuring tannins on the finish.
